Now, let’s get to our meal plan and recipes.

Meals & Recipes for February

Zuppa Toscana for Homemade Soup Day

Did you know that February 4th is Homemade Soup Day? Let’s make this easy Zuppa Toscana. It is without a doubt one of my favorite soups. And, since it’s broth based and has kale, it’s healthy, too!

Zuppa Toscana
This my copycat version of Olive Garden's soup. It's full of flavor with potatoes and sausage, yet has kale to balance the richness. To make it lower in fat, use turkey sausage.

Black Bean Soup

Black Bean Soup is my answer to the perfect weeknight meatless meal (just leave out the bacon). It is so good that you won’t miss the meat. I use an immersion blender (or a food processor/blender) to mash some of the beans, but you can mash them by hand, too. It makes for a creamier, richer soup.

Black Bean Soup
This is a really versatile recipe. You can easily spice it up by using original Rotel instead of the mild version. It can be adapted to make it vegan (leave out the bacon and use vegetable broth) friendly. I like my soup a little creamy so I use the blender to mix the last can of beans with broth until creamy.

Steak & Shrimp – Valentines Dinner

How about a romantic dinner at home this Valentine’s Day? It’s what we do to avoid the long waits and crowded restaurants on February 14th. After all, there’s nothing romantic about that. So, check out my tips for having a romantic night at home here.

Ever since my husband upped his steak grilling game, I’d rather have steak at home anyway. A really good steak dinner at a restaurant is expensive. And, I’m often disappointed when it’s over cooked or too chewy. For easy directions and tips on grilling steak, check out this post (scroll down post for recipe).

Grilled Shrimp with Fresh Herbs
If you don’t have fresh herbs, substitute 1 tsp of dried. Preparation time doesn’t include 15-30 minutes of optional “marinating.”

Creamy Chicken Enchiladas (with Low-Carb option)

Looking for the best, creamiest chicken enchilada recipe? Look no further. I’ve been making these enchiladas for years. They are delicious, and you’ll love this February dinner. Plus, you can make them low-carb and never notice the difference.

Creamy Chicken Enchiladas
These are the creamiest, cheesiest Chicken Enchiladas out there. Flour tortillas are filled with shredded chicken, cheese, and mild green chiles. Then they are topped with a creamy sayce and topped with cheese. Get ready for a delicious meal!
Night Before Tip: Cook your chicken ahead of time. Consider making enough for another meal like my Chicken Pot Pie, Chicken Stew with Dumplings, or Chicken Cobb. Instructions for cooking chicken are in "notes" section.

Turkey Burgers with Sweet Potato Oven Baked Fries

Although I love a good beefy burger, these turkey burgers match them in flavor. Plus, they’re much lower in saturated fat. For a healthy meal, serve them with sweet potato fries instead of regular fries. Give making your own hamburger buns a try. After the first time I made them, I was hooked! This is a family favorite dinner.

Turkey Burgers
These burgers are so delicious, you'd never know they have turkey instead of beef! Check out my recipe for 40 minute homemade buns for the best meal ever.

Chicken Chile Verde

This is one of the first meals that I made in the Instant Pot. It’s a quick and easy weeknight meal. But, if you don’t have an Instant Pot, cook it in the Crock Pot. The instructions are include in the recipe. Serve it over rice, or in corn tortillas.

Chicken Chile Verde (Instant Pot or Slow Cooker Recipe)
This Chicken Chile Verde is a cook once, eat again meal. Make it early in the week and you can use the chicken to create other meals, such as Chicken Enchiladas or Chicken Cobb, later that week.

Sheet Pan Sausage & Veggies

This is my new favorite fast dinner, so it makes sense that it’s on my February dinner list. I use chicken or turkey sausages since they’re lower in fat. With roasted veggies, it’s the perfect combination of protein and healthy carbs.

Sheet Pan Sausage & Vegetables
You can't beat a sheet pan meal for quick & easy. Plus they are a complete dinner, on one pan. Use parchment paper or foil for mess-less cleanup.
