February 9th is World Pizza Day! Let’s celebrate with homemade pizza. Try my fool-proof and easy pizza dough recipe. Regardless of your previous experience making pizza dough, you’ll ace this and become a pizza wonder.
Black Bean Soup
Black Bean Soup is my answer to the perfect weeknight meatless meal (just leave out the bacon). It is so good that you won’t miss the meat. I use an immersion blender (or a food processor/blender) to mash some of the beans, but you can mash them by hand, too. It makes for a creamier, richer soup.

Turkey Burgers with Sweet Potato Oven Baked Fries
Although I love a good beefy burger, these turkey burgers match them in flavor. Plus, they’re much lower in saturated fat. For a healthy meal, serve them with sweet potato fries instead of regular fries. Give making your own hamburger buns a try. After the first time I made them, I was hooked! This is a family favorite dinner.

Chicken Chile Verde
This is one of the first meals that I made in the Instant Pot. It’s a quick and easy weeknight meal. But, if you don’t have an Instant Pot, cook it in the Crock Pot. The instructions are include in the recipe. Serve it over rice, or in corn tortillas.
Lasagna (with low-sodium & gluten-free options)

This is my new favorite fast dinner, so it makes sense that it’s on my February dinner list. I use chicken or turkey sausages since they’re lower in fat. With roasted veggies, it’s the perfect combination of protein and healthy carbs.

National Strawberry Day is February 27th. We love Strawberries! In fact, we used to live in one of the biggest Strawberry producing areas of the country. To celebrate Strawberry Day, I’ll be sharing a special Strawberry blog post later this month.
