Caprese Chicken


This keto Caprese Chicken recipe is fresh, juicy, packed with summer flavors, and baked in one skillet. .

– 4 pcs thin-cut chicken breasts  – 2 tablespoons olive oil – 1 pint cherry tomatoes  – 2 cloves garlic, minced – ½ teaspoon Italian seasoning – 8 slices fresh mozzarella cheese – 10 slices Roma tomato 

Step 1

Preheat the oven to 375°F. Add the chicken breasts to the pan and cook them for 4 mins on the each side, until golden brown.

Step 2

Remove the pan from the heat and add the cherry tomatoes, garlic, and Italian seasoning. Toss to combine.

Step 3

Place two pieces of mozzarella cheese and two or three slices of Roma tomato on each piece of chicken.

Step 4

Put the cooked chicken in the oven and bake it for 8-10 mins, and the internal temperature of the chicken is 165°F.

Step 5

Sprinkle over the basil leaves and drizzle over the balsamic glaze on top of baked Caprese chicken. Then serve immediately.

To crisp the tomato and mozzarella, broil it on high heat for a few minutes
