Preheat oven to 375°. Combine peaches, cornstarch, sugar, and lemon juice. Transfer to a cast iron skillet and bake for 20 minutes.

Next, combine Bisquick, sugar, milk, and butter in a medium bowl.

The cobbler batter will be thick, with a rough dough-like consistency.

Scoop and drop spoonfuls of dough onto the peach mixture. Gently press down to submerge, and bake for another 15 minutes.

Remove from the oven once the cobbler is bubbling and golden. Let cool 10 minutes before serving warm.
