Sourdough  Rolls

delicious & easy

Soft and fluffy sourdough pull-apart dinner rolls are the perfect recipe to use with your sourdough starter discard and make something delicious.

Ingredients

– Sourdough starter – Warm water – Granulated sugar – Bread flour  – Extra-virgin olive oil

Step 1

Add the starter to a bowl. Mix in warm water and sugar. Add flour, oil, and salt. Stir until a thick, shaggy dough forms.

Step 2

Flour your hands, and finish mixing dough by hand. Cover with a clean, damp kitchen towel and let the dough rest for 30 to 45 minutes.

Step 3

Stretch and fold it by stretching 4 inches, pushing it down the middle, and turning it 1/4 turn.

Step 4

Repeat this process until you make a complete circle. Return dough to the bowl, cover it with a towel, and let it rise overnight.

Step 5

Flour your countertop lightly. Remove dough from the bowl and stretch it into a rectangle. Roll the dough into a log shape.

Step 6

Cover it and let it rest for 10 minutes. Cut dough into 16 pieces. Roll each piece of dough into a ball.

Step 7

Then, pull the dough tight by pulling it towards you along the countertop for 5-8″. Put the dough on an oiled baking sheet.

Step 8

Cover the baking sheet and let the dough rise for 2 hours until it has doubled in size. Preheat your oven to 425ºF.

Step 9

Bake in the center of the oven for 8-10 minutes. The top of the rolls should be golden.

Brush the tops with melted butter and sprinkle with flake salt, if desired.
