1⅓cupsmilkwhole milk works best, but almond, oat, or soy milk are great substitutes.
1largeeggbeaten
2tablespoonsvegetable oil or melted butter
cooking spray
Instructions
Spray waffle maker with cooking spray and let it pre-heat while mixing the batter.
In a medium sized bowl stir together the baking mix, milk, egg and oil. Do not over-mix
Once the waffle maker is ready, slowly pour about 1/2 cup of batter to the center of the hot waffle maker. Close the top and cook until ready, about 3-5 minutes.
Carefully lift the lid and use tongs to remove the waffle. Continue the process for the remaining waffles. I recommend keeping the waffles warm in your oven while they all cook. Use an oven-safe container and set your oven to 170ºF.
Serve with your favorite toppings, like butter, maple syrup, blueberry syrup, or top with fresh fruit like sliced strawberries or peaches, or blueberries.
Notes
Don’t Overmix the Batter – A few lumps are okay! Overmixing can make the waffles dense instead of light and fluffy.

Chocolate chip: Stir ½ cup mini chocolate chips into the batter for a kid-friendly twist.
Cinnamon sugar: Add 1 teaspoon cinnamon and 1 tablespoon sugar to the batter for extra warmth and sweetness.
Savory goodness: Reduce the sugar and mix in shredded cheese, cooked bacon, or chopped herbs for a savory take.
