1cupgranulated sugarcan swap for coconut sugar
1large egg
1teaspoonvanilla extract
1 ½cupsall-purpose flour
2tablespoonsmatcha powder
2tablespoonscornstarch
1teaspoonbaking powder
½teaspoonbaking soda
1cupwhite chocolate chipscan swap with dark chocolate chips
Instructions
Preheat your oven to 350℉ and line your baking sheet with parchment paper.
In a large mixing bowl, cream together the butter and sugar until light and fluffy. You may use use a stand mixer with the paddle attachment or a hand mixer. Add the egg and vanilla extract, then mix until smooth and fully combined.
In a separate bowl, mix dry ingredients (except chocolate chips)-flour, matcha, cornstarch, baking powder and baking soda.
Gradually add the dry ingredients into the wet ingredients, mixing on low speed or stirring with a silicone spatula until fully incorporated. The dough should be thick but well-mixed with no dry spots.
Gently fold in the white chocolate chips until evenly distributed throughout the cookie dough.
Using your 2 tablespoons cookie scoop, scoop 6 cookie dough balls onto each baking sheet. They do spread out while baking and there won’t be room for more than six cookies on your tray while they bake.
Remove from the oven and let set on the tray for 3-5 minutes before moving to a cooling rack. Enjoy!
Notes
Chill the dough – For even better flavor and texture, refrigerate the dough for 30 minutes before baking.
Recipe Variations:
Swap the sweeteners: use brown sugar instead of white sugar for a deeper, caramel-like flavor and extra chewiness.
Go big on chocolate: replace white chocolate chips with white chocolate chunks or even a chopped chocolate bar for pockets of melty goodness in every bite!
Matcha & green tea blend: add finely ground green tea leaves along with green tea powder for an even more intense earthy tea flavor.
Nutty crunch: add chopped macadamia nuts, almonds, or pistachios for extra crunch and a nutty contrast to the smooth white chocolate.
Storing Instructions:
If you plan to enjoy them within a few days, keep them at room temperature in an airtight container to maintain their soft and chewy texture.
If you need to store them for more than a week, refrigerate them in a sealed container to extend their freshness.
For even longer storage, freeze the cookies by wrapping them individually in plastic wrap and then placing them in a freezer-safe bag or container. When ready to enjoy, simply let them come to room temperature or warm them slightly for that fresh-from-the-oven taste!
