Yes, you can! I substitute cream cheese and cheddar cheese for the Velveeta. To substitute all of the Velveeta, use 8 ounces of cream cheese and 8 ounces of grated cheddar cheese (2 cups).

This recipe makes a very rich, thick soup. If you prefer a thinner soup, add 1 cup of beef broth to your ingredients list.

And if you like a lot of spicy heat, use Original Rotel. We use Mild Rotel for just a hint of spice. To make this incredibly family-friendly, feel free to use a can of simple petite diced tomatoes with no peppers.

For a slow cooker, use a skillet for this first step.

Start off by browning the ground beef on medium heat. When it’s about done, add the onions, then garlic.

Turn the heat down to medium-simmer, and cook until the meat is completely browned and the onions are translucent.

Then add the mixture to your slow cooker, if you’re using one.

Add the rest of the ingredients to the slow cooker. If you’re making this on the stove top, add the rest of the ingredients to your pot.

For stovetop cooking, simmer soup until the cheeses melt, and the soup has thickened.

In the slow cooker, set it for 5-7 hours at low heat. I don’t recommend using the high heat setting. You are better off using the stovetop to prepare the soup, then keep it warm in the slow cooker.

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cans (10 oz) Rotel Mild diced tomatoes, undrained (see FAQ for substitutions)

  • In a medium dutch oven or soup pot, brown the beef, onions, and garlic; drain fat off.
  • Add Rotel and bring to a boil. Reduce heat. Add a lid to the pot, and simmer for 10-15 minutes. Turn off heat and stir in Velveeta until it melts. Season with salt and pepper to taste.
  • Garnish with crushed corn chips, cheese, or even bacon bits. Leftovers can be frozen for up to 3 months.

Slow Cooker Instructions
