And to all of you, too. Gosh, how I’ve missed y’all. With this new season, though, I am fired up and ready to get back to blogging regularly. Of course, I have many new recipes to share and a little fall decor.
First I have to show you the cutest photo. Can you believe how big my grand littles are? And, since I last posted, our family has grown by one. In May, we welcomed our fourth grandchild, Molly Renae Ziff.
Fall Cooking
I love fall cooking. The summers are hot here, so I tend to avoid anything that heats up the kitchen – like using the oven. When October arrives, I am ready for soups and casseroles. So you can expect to see a lot of them in the next few months.
What are your favorite soups? My favorites are recipe for Zuppa Toscana Soup, Lasagne Soup Recipe, San Francisco Clam Chowder with bread bowl recipe, and Instant Pot pozole verde. They make regular appearances in my meal plans throughout the fall, winter, and early spring. You guys know I love my one-pot meals.
Speaking of one pot, my love affair with the Instant Pot still burns hot (pun intended). It’s just as convenient as the slow cooker, but for different reasons.
The slow cooker is better suited for a meal that’s planned and you want to set and forget.
The Instant Pot is a multi-pot that’s versatile. It provides quicker prep and is ideal for last-minute “what are we having?” meals. It creates perfectly cooked soft or hard-boiled eggs and makes yogurt, tender, and juicy shredded chicken, and soups.
Not to be overshadowed by soups, I am really looking forward to making casseroles again, too. Some of my favorites are Macaroni & Cheese, Mashed Potato Casserole, and Skillet Lasagna.
